Keeping socks in pairs through the entire wash cycle saves time sorting, and also prevents a missing sock. Laundry, especially small items, can get left behind in the washer, and not even make it to the dryer. Sometimes a sock you thought you'd lost turns up later, perhaps picked up eventually in the next load. But by then, the first one could be in the single sock pile, or floating around in the sock drawer.
